In Season: December
Think of a classic Christmas dinner with all its trimmings and you’ll be able to pinpoint a number of the beautiful ingredients which are in-season in December.
Despite the cold weather, December still brings a wealth of colourful, fresh produce from ruby red cranberries and pink forced rhubarb to bright orange swede and, of course, gloriously green brussels sprouts.
Earthy root vegetables such as celeriac and Jerusalem artichoke can be roasted in just a drizzle of oil and some salt and pepper as an accompaniment to rich game such as pheasant. If you’re looking for something lighter, reach for the radicchio, which can be used as the base for a winter salad sweetened with segments of clementine.
